This week has been busy. We've been slowly (but surely) switching the kids' bedrooms, which of course has turned into a reorganization of about half the rooms in the house. Andrew was swamped at work and I had several projects that each needed a good deal of time & attention. The kids were busy every day with various things and it was all a bit much this week. I had plans each weeknight to make this lasagna, but something happened each night to prevent that from happening. Yes, there were several "fend for yourself" dinners this week, unfortunately.Tonight I was bound and determined to put a hot meal on the table. Each of the big kids had another friend over so lasagna was perfect, with its whopping 12 servings. Everyone (but Josie, who hardly counts) happily ate, some asking for seconds. Then, in the highlight of my week, Avery's friend told her mom that she had the best dinner of her whole life tonight. And she's 10 so her whole life is a long time!
(Yes, I'm smart enough to know she was just being polite, but still... it made me happy.)
